Jaffa Bliss Balls

Makes 20

2 cups rolled oats

1/4 cup almond butter

1/2 cup almonds

2 tablespoons cacao

8 medjool dates, pitted

1 teaspoon vanilla

Juice & finely grated zest of medium orange

1/2 teaspoon sea salt

Cocoa powder for rolling

Using a food processor, add the oats and almonds, and blend until you have a breadcrumb-like texture

Add the cocoa, orange zest and salt and pulse a few times to mix.

Add the almond butter and pulse. Add the dates along with a splash of the orange juice, and blend. You want the mixture to begin to clump together.

If it’s too dry and keeps it’s crumb-like texture, keep adding more orange juice, a little at a time, until you have a mixture that holds together when you pinch it.

Roll into the mixture into balls and sprinkle with cocoa powder. Store in the fridge until serving.
